Loaded Sweet Potato
Ingredients
1 sweet potato
1 oz roasted, crushed pecans
1 oz goat cheese
6 vidalia onions
1tsp olive oil
1 tsp honey
1 tsp salt
1/2 tsp sugar
1/2 tsp cinnamon
1/2 tsp cayenne
Preparation
Baking: Wrap the sweet potato in foil and place in a 400*F oven for 45 minutes.
Microwave: Prick the skin of the sweet potato with a fork and microwave for 5-10 minutes, depending on size.
Slice your onions and place them in a pot over low heat with olive oil and a sprinkle of salt.
Cover with a lid and cook them for 2 hours or until they become jammy. Stir every few minutes to prevent burning. If the onions begin to stick, add a teaspoon of water and lower the heat. Once they are almost done, remove the lid and stir gently to prevent burning until they are as caramelized as you prefer. Transfer to a pan to keep warm.
Combine all your spices.
Cut the sweet potato in half and garnish with all the toppings.
