Romesco Sauce
Ingredients
1 ½ cup roasted tomato
¾ cup almonds, toasted and cooled
2 tbsp honey
¾ cup extra virgin olive oil
½ cup sherry vinegar
Salt
2 tsp chili flake
1 ½ cups roasted red peppers
1 ¼ tbsp roasted garlic
Preparation
Add all ingredients to a blender and blend well.
Chef’s recommendation: Serve with roasted asparagus and top with a little parmesan cheese
